Made a Leicester this morning - its in the press now.  Same procedure as with Derby, but slightly warmer and with smaller curd.  My second attempt at cheddaring, and it went quite well.  By the time it was ready to crumble and put in the mold it had already lost most of its whey.  I’ll let y’all know in 4+ months when it comes ripe.
