Sounds like you’ve been busy.  I agree on the Manchego - a nice quick cheese with great taste and texture.  My teen age boys don’t let it sit too long.  The recipe I have says to oil it rather than wax.  Let us know how it turns out How long do you plan to age it, and did you use Lipase?

I do use Lipase.  The mild.  Am going to try it with the sharp soon.  My recipe also says to oil it, but I thought to keep it around longer the wax would be the thing to do.  I’ll keep you posted.
