Made another Colby yesterday.  I was “pressed” for time and the pressing schedule did not exactly mesh with my time allotment.  So, the final press was done in two segments.  I got to the 50 lb press, which was supposed to be for 12 hours, but I had to leave for work after 8 hours.  So I turned it and pressed for another 12 hours until I got home from work.  It seems that there was still quite a bit of whey during that final press, so it may have been beneficial - it lost 3/4” in height in that last press.

It will be interesting to hear how it turns out.  The additional 8 hours of pressing may make for a denser cheese.  Keep us posted.
