Okay, I’m excited…..
I checked my Stilton this evening and I have some bluing starting. I was a little concerned with this cheese since my mold was approaching two years old and had never been in the freezer.
I lifted the mold and there are a couple of areas which have some blue beginning. Also, the aroma of the cheese is nearly overwhelming.
I’m going to keep flipping it in the mold for the next couple of days. It still looks fragile but it did hold together really nicely when I slid the mold up to take a peek.
Wednesday will be six days in the mold and at that point I will remove the mold and let the cheese live or die on it’s own. I’m sure it will hold together but still…..I’m really uptight about this cheese.
Wish me luck. If this one fails I might just fall into a deep depression. grin
