Here’s Saturday’s Colby after air drying for 24 hours.  Its not as sexy as Dave’s traditional cheddar, but it might be worthy of a place on Neil’s cheese calendar.  One more day of drying and this baby will be ready for wax.

Thank you all for the compliments.  Its terrific to walk through the kitchen and see that delightful wheel of cheese drying.  The proof, however, will be in the eating a couple or more months down the road.  But you guys have brought up a very good point.  There is a lot of aesthetic appreciation in cheese making.  Its not just producing a food product.
