I opened a 6 1/2 month old Colby tonight, and it was super.  Medium sharp and just slightly moist.  Great taste.  It was worth waiting for.  What are you all into these days?

Go for the stirred curd Neil!  I guess I’ve made it known that I’m not a mold person.  The closest I’m going to get to mold is the fungi growing in my living room - a grow your own mushroom kit that I got for Christmas.

Ive done the mushroom kits, their great, the only thing is its not fun doing it in the apartment because when they release their spores the whole bathroom was covered with a fine powder..
Used to have a web page for that but I noticed I took it down :(
