i’m new to this forum, but i thought i’d post a picture of my tiny cheese-aging fridge:

and here it is just about full:

it’s a little ridiculous, but it seems to work pretty well and maintains a decent level of humidity.
my boyfriend got it at thinkgeek.com:

for about $100.  it is partly made of plastic, but seems solid. it has a handle on top, and an adapter for plugging it into your car cigarette lighter, should you want to take your cheese on the road :).

well, i should have held my tongue—just yesterday, the little fridge lost its tiny mind. it started displaying in the 70’s and 80’s F on its readout, but actually cooling to about 40F inside. i called the manufacturer and they said that it isn’t intended to be used 24/7 for more than a few days, that it’s meant to be for travel/camping etc. so i’m sending it back and buying a normal mini fridge and a thermostat.
oh well.

I bought a little refrigerator, one of those short ones that go under the counter. I can’t seem to get it above 52 degrees, but that’s fine for what I have in it right now.

I have a couple of thermostats from Johnson Controls that I use. They plug into the wall, then you plug the fridge into them. They have a probe that you place in the fridge. They control the temperature by turning the power off and on. But, I don’t know if they make them any more. I can’t find them on their web site. Rick does seem to still have them on her site.
