Cream Cheese and Raspberry Coulis

3/4 lb of fromage blanc (try a cream
cheese like Philadelphia, or try
whipping and draining cottage
cheese)
1 cup whipping cream
50 gm powdered sugar

1 lb fresh or frozen raspberries
80 gm powdered sugar

1 pint fresh raspberries
1 pint fresh black berries, blueberries,
or other fresh berries
1 small bunch of mint
Instructions:
Let the cheese drain overnight to remove all water.

Whip the cheese to soften it. Add the sugar. Mix well.

Whip the cream until firm. Using a whisk, mix the cream with the cheese a little at a time. Work on ice to keep the mixture cool.

Line individual ramekins with some gauze or cheesecloth. Using a pastry bag, pipe the cheese mixture into the ramekins and flatten the surface with a spatula. Refrigerate 2 hours.

Make the coulis by pureeing the raspberries with the sugar using a food processor. Pass through a seive to remove seeds. Refrigerate.

Just before serving, unmold the cheese on a plate. Remove the cheesecloth and smooth the surface with a knife or spatula. Pour the coulis around the cheese. Top with a mint sprig and arrange fresh berries around.
