6 eggs, separated 3 blocks of high quality chocolate (3.5 oz. each) 1 stick + 2 tbs. sweet butter 7 tbs. granulated white sugar 2 tbs. white flour 1 pinch salt |

Instructions:

1. Melt chocolate and butter with a bit of liquid (rum, coffee, orange juice, etc.) over very low heat. Add egg yolks, one at a time, sugar and flour, mixing after each addition. 2. Beat the egg whites firm with a pinch of salt. Gently add to the chocolate mixture. 3. Bake in a slow oven in a greased and floured pan for about 40 minutes. (300°F.) |
