Ingredients:
6 pears, peeled, quartered, sliced
12 tbs. flour
12 tbs. sugar
3 tbs. water
5 eggs, separated
5 oz. butter, melted
1/2 tsp. baking powder
1/2 tsp. cinnamon

Consider increasing baking powder to 1 tsp. if not coming out springy.

Instructions:
You can use any fruit with this recipe: raspberries, apples, peaches, apricots, cherries...

1. Stir flour, sugar, baking powder, egg yolks, cinnamon, and a pinch of salt until completely blended.

2. Add melted butter. Mix well by hand. (May need to add 1 tablespoon or so of water).

3. Beat egg whites until stiff. Gently fold into flour mixture.

4. Grease a mold and arrange cut-up pears in the bottom. Pour dough into the mold and bake 30 minutes at 350F.

5. Turn upside-down to serve.
