A dear friend of ours from our "off the grid" days gave us this recipe. She almost always had some on hand when we'd visit. |

3/4 cup peanut butter 1/2 cup shortening (Crisco) 1-1/4 cups firm brown sugar 3 Tbs milk 1 tsp. vanilla 1 egg 1-3/4 cup flour 3/4 tsp. salt 3/4 tsp. baking soda |

Instructions:

1. Combine peanut butter, shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed of mixer until well blended. Add egg and beat just until blended. Combing flour, salt and baking soda. Add to creamed mixture at low speed, mix just until blended. Drop by heaping teaspoon 2" apart on uncreased baking sheet. Flatten slightly in crisscross pattern with fork. Bake at 375°F 7 to 8 minutes or until set adjust beginning to brown. Cool 2 minutes on baking sheet and remove to rack. |
