1 large sweet yellow onion, out skin removed and sliced into 1/2-inch thick pieces (I’ve used a Spanish onion.) 1/2 cup all-purpose flour 1 tsp. salt 1/4 tsp. smoked paprika Pinch cayenne (optional, for a little heat) 2 eggs + 2 tbs. water, beaten (original recipe calls for 3 & 3) 2 cups panko bread crumbs, I also mixed in some corn meal Olive oil cooking spray Salt for sprinkling |

Instructions:

1. Preheat oven to 450°F. Line one or two sheet pans with parchment paper. I’ve found a medium to large onion feeds two nicely and can be place on one sheet pan. 2. Set up a dredging station with 3 bowls. One for flour, smoked paprika, cayenne (if using), and salt whisked together. A second for the beaten eggs. And, a third with panko bread crumbs and, if you want, a little corn meal mixed in. 3. Take one onion slice and dredge it in the flour, shaking off any excess. Dip it into the egg mixture so it is completely coated. Then, dip it into the panko mixture so it is covered. Place the onion ring on the parchment lined baking sheet. Repeat with the rest of the rings. You can nestle small rings inside larger ones for better space efficiency. 4. Spray the tops of the onion rings generously with olive oil cooking spray. Bake 20 to 25 minutes, or more, until the onion rings are golden brown and crispy. If using two pans, you may need to swap them around halfway through. You don’t need to flip the onion rings. (The original recipe called for 15-20 minutes of cooking time, but we found that was not enough with our oven.) 5 When done baking, remove from the oven and sprinkle with some salt. Serve warm. |
