Pasta Dough for KitchenAid Extruder

Comments:
Dough used with the extruder must be dryer than used with a roller. So, don't let this get too wet.
Serving Suggestions:
Ingredients:
3 cups a/p flour
3/4 tsp. kosher salt
4 large eggs

Instructions:
1. Using the paddle attachment on the KitchenAid, stir together the flour and salt for a few seconds. Add the eggs and mix at low speed until well incorporated. Or, use a food processor and pulse all ingredients until crumbly. At this point, take some of the dough and pinch it to see if it will hold together. You want it to be just moist enough to form a ball when kneaded, but not sticky. Adjust with flour or water to get the right consistency.

2. Remove from mixer and hand knead for several minutes on a lightly floured surface.

3. Wrap with plastic wrap and refrigerate at least 30 minutes to hydrate.

4. Pull off golf-ball sized chunks and roll between your hands to prepare for the extruder.
