Tomato and Butter Sauce

This is a very simple sauce with concentrated tomato flavor and goes great on pasta or as a pizza sauce.
Serving Suggestions:
Serve over almost any kind of pasta, but it is especially good over filled pasta such as tortellini or ravioli. Top with grated Parmesan cheese.
Ingredients:
4 cups, about 32 ounces, canned whole peeled Italian tomatoes with their sauce (We use one large can)
5 tbs. butter
1-1/4 tsp. kosher salt
1 medium sweet yellow onion
Pasta of your choosing
1/3 cup Parmigiano-Reggiano cheese, grated as needed

Instructions:
1. Coarsely chop the canned tomatoes. Trim both ends of the onion, peel it and cut in half lengthwise.

2. Put the tomatoes, butter, onion and salt in a 4 to 5 quart saucepan and place over medium heat. When the tomatoes begin to bubble, lower the heat to a slow but steady simmer. Cook, stirring occasionally, until the tomatoes are no longer watery and the sauce has reduced--45 minutes to 1 hour.

3. Serve over pasta and top with grated cheese. (You can remove the onion, or include it in a rustic presentation.)
