1.5 cups red bulgur 1.5 cups boiling water 2 cups finely chopped fresh parsley 1/4 cup finely chopped fresh mint 1/4 cup minced scallions 2 medium tomatoes, seeded and diced 1 medium cucumber, seeded and diced 1/2 tsp. salt 1/4 tsp. ground cumin 1/4 tsp. ground black pepper 3 tbs. fresh lemon juice, more to taste 3 tbs. olive oil |

Instructions:

1. Combine bulgur and boiling water and soak for 1 hour. Drain well and squeeze out excess water. 2. In a large bowl, combine bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour. 3. Just before serving, add olive oil and toss well. Test for seasoning, I usually find it needs some ground black pepper but no salt. |
