1/4 cup mayonnaise 1/4 cup sour cream or Mexican cream 1/2 cup finely crumbled Cotija or feta cheese, plus more for serving 1/2 tsp. ancho or guajillo chili powder, plus more for serving 1 medium clove garlic, finely minced 1/4 cup finely chopped cilantro leaves and tender stems 4 ears of shucked corn, leaving the stem on for a handle 1 lime, cut into wedges |

1. Light a charcoal grill or preheat a gas grill. Clean and oil grates. While preheating: 2. Combine mayonnaise, sour cream or cream, cheese, chili powder, garlic and cilantro in a large bowl. Stir until well combined and set aside. 3. Grill corn directly over heat, rotating occasionally, until cooked through and charred in spots on all sides, 8-10 minutes. 4. Transfer corn to the bowl with the cheese mixture and use a spoon to even coat the corn on all sides with the mixture. Sprinkle extra cheese and chili powder on the corn and serve immediately with lime wedges. |
