These are easy to make and can be cooked on a sheet pan with other ingredients like green beans, potatoes, brussels sprouts, etc.Toss with some oil, salt & pepper, and add to the sheet pan appropriately--usually with 15 to 20 minutes left on the cook time
Serving Suggestions:
Good with roasted green beans and sweet potato mash.
Ingredients:
3 tsp. balsamic vinegar
2 tbs. ketchup
1 clove garlic
Some chopped parsley
1/2 yellow onion, peeled and grated
1/2 cup panko breadcrumbs
5-6 oz of lean ground beef per person (1 pound should make 3 meatloaves)
1 egg

Instructions:
1. Adjust rack to middle of oven and preheat to 450°F.

2. In a small bowl, mix 1 tbs balsamic vinegar and the ketchup.

3. Mince 1 clove garlic, chop parsley. Grate 1/2 peeled onion in another large bowl.

4. Add garlic, parsley, panko, beef and 1/2 tsp salt with the onion, in the larger bowl. Crack 1 egg into the bowl. Season with pepper, then mix with your hands to combine. Shape into 2-3 1-inch tall loaves, then place on lightly oiled baking sheet. Brush with the ketchup/vinegar mixture.

5. Roast meatloaves in oven until cooked through, about 25 minutes total. (Add any other sheet pan ingredients after 10 minutes or so.)
