Ingredients:

3-4 pound beef brisket, trimmed of most fat 1 tbs. olive or canola oil (used at the end) For the rub: 1 tbs. brown sugar 2 tsp. paprika 1 tsp. onion powder 1 tsp. garlic powder 1/2 tsp. cumin, ground 3/4 tsp. mustard powder 1 tsp. kosher salt 1/2 tsp. fgbp For the BBQ Sauce: 2 garlic cloves, minced 1/2 cup apple cider vinegar 1-1/2 cups ketchup 1/2 cup brown sugar, packed 2 tsp. each black pepper, onion powder and mustard powder 1 tsp. cayenne pepper, adjust for heat (we use a bit less) 1 tbs. Worcestershire sauce |

Instructions:

1. Mix rub ingredients and rub all over the brisket. Leave for at least 30 minutes, but ideally overnight in the fridge. 2. Combine the BBQ sauce ingredients and pour into the slow cooker. Add the brisket and push it down into the sauce. 3. Slow cook on low for 8 to 10 hours depending on the size of the brisket. 4. Remove the brisket to an ovenproof sheet pan.. 5. Pour BBQ sauce liquid into in saucepan and bring to a simmer over medium heat and reduce until it thickens to a syrup consistency. It will thicken more as it cools. We actually find that the sauce is usually sufficiently thick and so we skip this step. 6. Meanwhile, drizzle the brisket with oil and then roast in a 400° oven for 15 minutes until brown spots start to appear. Remove and baste generously with the BBQ sauce and return to the oven for 5 minutes. Repeat and cook until the meat has a nice caramelization layer on it. 7. To serve, slice the brisket thinly and against the grain and serve with remaining BBQ sauce. It can be served stand-alone, or on buns, perhaps with coleslaw piled on top. |
