I was given this recipe on the last night we ate at the Auberge before moving from Cremieu back to the U.S. It was my favorite dessert.

Pie Crust (Sweet):

150 gm flour
100 gm room temp butter, whipped
1 pinch salt
75 gm sugar
1 egg

Filling:

150 gm bittersweet chocolate
1 whole egg
2 egg yolks
30 gm sugar
100 gm room temp butter

Instructions:
Make the dough first. In a bowl mix the butter, sugar, beaten egg, and salt. Then, incorporate the flour and work it a little with a spoon. Put it in a bowl and cover with a damp towel. Keep cool for 2 hours before using.

Preheat oven to 350° F. When dough has rested, roll it out to fit in an 8 inch pie plate. Prebake for 12 minutes.

While the pastry is cooking, melt the chocolate in a double boiler.

While the chocolate is melting, beat together the whole egg, the egg yolks, and the sugar until the mixture forms a ribbon. Slowly add the melted chocolate and the butter. Mix well.

Pour into the pastry and cook at 350° F for about 15 minutes.

Serve warm topped with powdered sugar.
