Salsa Verde (Green Tomatillo Sauce)

Tomatillos look like green tomatoes, but they aren’t a tomato at all. They have a tangy, citrusy taste that can be tart. This sauce can be used with or on other dishes (such as a stew with pork), or it can be a dip for tortilla chips.
Serving Suggestions:
Ingredients:
1 pound tomatillos, husks removed, chopped; or 1 (11 ounce) can of tomatillos, drained
1/2 cup white onion, diced
2 garlic cloves, minced
2 or 3 serrano or jalapeño chiles (with seeds for heat), minced, adjusted to your taste
1/4 cup chopped fresh cilantro
Sugar
Salt

Instructions:
1. If serving as a room temperature salsa, with chips for example, combine all the ingredients in a bowl. Add sugar and salt to taste. Allow the salsa to sit for an hour before serving to allow flavors to blend.

2. If serving hot, combine the tomatillos, onion, garlic and chilies in a pan. Simmer over low heat for a couple of minutes, until the tomatillos are soft but still colorful. Add sugar and salt to taste.

3. For a chunky sauce, stir in the cilantro and serve. Otherwise, put the sauce in a blender or food processor and purée until smooth. Add the cilantro and serve.
