A lot of the recipes in this book are “company” recipes, great for entertaining. This one is more “comfort food” and is especially good when you want a quick but tasty meal. We like it because it brings back memories of store-bought Hamburger Helper from the good-old-days, but does not have the preservatives and additives of the commercial product.
Serving Suggestions:
Ingredients:
1 pound lean ground beef
1 cup dry macaroni of your choice, we use large elbows
1 cup hot water*
2 cups milk*
1 tbs. cornstarch
1 tbs. paprika
2 tsp. onion powder
2 tsp. garlic powder
1 tsp. dry mustard
1 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 cup cheddar cheese, grated

*Or, instead use beef broth for part or all of the liquid

Instructions:
1. Mix together the cornstarch, paprika, onion powder, garlic powder, dry mustard, salt and pepper.

2. In a large skillet, brown the ground beef over medium heat and drain any grease.

3. Stir in the spice mixture along with the water and milk and pasta. Stir to combine, bring to a boil, reduce to a simmer, cover and cook 12 minutes.

4. Remove from the heat and stir in the cheese. Cover and let sit 2 minutes. Check for seasoning (we find it usually needs a bit more salt). Serve hot.
