Ingredients:

1 tsp. sesame oil 1-1/2 pounds skinless, boneless chicken breast and/or thighs, cubed 6 tbs. rice vinegar 6 tbs. soy sauce 1 clove garlic, chopped 1/4 tsp. ground ginger 1/4 tsp. crushed red pepper 3/4 cup hoisin sauce 4 tbs. brown sugar 2 tbs. cornstarch 2 cups cooked white rice 1 scallion, chopped Lightly toasted sesame seeds |

Instructions:

1. Pour the sesame oil into the Instant Pot and select Sauté (normal or level 5 on ours). Add chicken to the pot. Cook, stirring, for 5 minutes or until the chicken is white (it does not need to be cooked all the way yet.) Press Cancel. 2. In a separate bowl mix together the rice vinegar, soy sauce, garlic, ginger, crushed red pepper, hoisin sauce and brown sugar. Pour the mixture over the chicken in the pot. Secure the lid. 3. Pressure cook on manual (or custom) at high pressure for 10 minutes. Use a quick release and press Cancel. 4. Select Sauté (normal). Bring to a slight boil. Whisk in the cornstarch until mixture turns thick and bubbly for about 2 minutes. Press Cancel. 5. Serve the chicken over rice, sprinkled with green onions and sesame seeds. |
