We are giving this 5 stars because it was so satisfying the first time we made it. I'm calling this an Oriental style dish because of the marinade, despite it being called Hawaiian Chicken. You can make the marinade ahead of time and refrigerate it, then easily prepare this dish in the RV. |

Ingredients:

1/3 cup ketchup 1/3 cup soy sauce 1/3 cup packed light brown sugar 2 tbs. rice vinegar 1 tbs. sriracha 1 tbs. Worcestershire sauce 1 tsp. sesame oil, or more to taste 1-1/2 tbs. minced garlic 1-1/2 tbs. minced ginger 3 pounds boneless skinless chicken thighs, trimmed of visible fat, about 9 pieces |

Instructions:

1. Make the marinade. Combine ketchup soy sauce, brown sugar, rice vinegar, sriracha, Worcestershire, sesame oil, garlic, and ginger in a medium bowl. Add 1/4 cup to a smaller bowl and refrigerate. 2. Add chicken to remaining marinade and toss to coat well. Cover and refrigerate for 2-8 hours. 3. Preheat grill to medium heat. Grill the chicken, turning every 4-5 minutes, basting with the reserved marinade. Grill for about 15 to 18 minutes until cooked. |
