Lemon Chicken Romano

A really nice breaded chicken cutlet recipe. Love the breading technique and flavors.
Serving Suggestions:
This can be served with mashed potatoes, grilled or steamed vegetables, etc.
Ingredients:
2 boneless, skinless chicken breasts, halved to create cutlets and pounded to 1/2 inch thick
Salt and freshly ground black pepper
1 large egg
1 tbs. all-purpose flour
3/4 cup Panko bread crumbs
1/3 cup Romano cheese grated fine
1 tbs. minced fresh oregano, plus some for garnish (we've used dried)
2 tsp. lemon zest
1/2 tsp. garlic powder
1/2 cup coarsely shredded Mozzarella cheese
1/2 cup coarsely shredded Provolone cheese
1/3 cup olive oil
4 lemon wedges for spritzing each serving
2 tsp. finely chopped green onion for garnish

Instructions:
1. Preheat oven to 350°F. Place chicken cutlets on a cutting board and sprinkle both sides with salt.

2. In a shallow dish or bowl, whisk the flour and egg together until well combined. In a separate bowl or shallow dish, combine the bread crumbs, Romano cheese, oregano, lemon zest, garlic powder and 3/4 teaspoon freshly ground black pepper.

3. Submerge one chicken cutlet in the egg mixture and let the excess drain off. Then, coat both sides with the breadcrumb mixture, pressing firmly to ensure the coating stick to the chicken. Repeat with remaining chicken pieces.

4. Heat olive oil in a 10-inch nonstick skillet and heat over medium-high heat. When hot, fry two cutlets at a time until the bottom is nice and golden brown, about 2 minutes. Turn, and fry the other side.

5. Remove the fried chicken cutlets to a greased sheet pan (lined with foil is good).

6. Repeat step 4 with the other two cutlets, placing them also on the sheet pan.

7. Top the fried chicken cutlets with Mozzarella and Provolone cheese. Place in the oven and bake for 8-10 minutes, to 165°F. Once cooked, plate and sprinkle with a bit of green onion. Garnish with the oregano leaves and a lemon wedge (for spritzing on the chicken cutlets.)
