Thai Chicken Meatballs

We serve this with a green vegetable such as snap peas. Could also be served with rice.
Ingredients:
1/2 cup sweet chili sauce
2 tbs. fresh lime juice
2 tbs. ketchup
1 tsp. soy sauce
1 large egg, lightly beaten
3/4 cup panko bread crumbs
1 green onion, finely chopped
1 tbs. minced fresh cilantro, or more to taste
1/2 tsp. salt
1/2 tsp. garlic powder
1 pound lean ground chicken

Instructions:
1. Make the sauce. In a small bowl, combine chili sauce, lime juice, ketchup and soy sauce; reserve 1/2 cup for serving.

2. In a large bowl, combine the egg, bread crumbs, green onion, cilantro, garlic powder, salt and remaining chili sauce mixture. Add the ground chicken, mix lightly but thoroughly. Shape into 12 meatballs. (The mixture will be quite wet.)

3. Preheat air fryer to 350°F. In batches, arrange meatballs in a single layer in the air-fryer basket. Cook until lightly browned 4-5 minutes then gently turn and cook another 4-5 minutes until lightly browned and cooked through.

4. Serve meatballs with reserved sauce for dipping and topped with additional chopped cilantro, if desired.
