Spicy Sausage Dogs

We usually cut this in half. We have good luck with Polish sausages, but any good somewhat spicy sausage will work fine. You can grill the sausages or cook them on a grill pan indoors. You could also air-fry then, I assume.

Ingredients:
One 12-oz. can lager beer (if you are cutting the recipe in half, drink the other half)
1 cup chili sauce, we use Heinz
1/4 cup malt vinegar
2 tbs. brown sugar
2 tsp. curry powder
2 tsp. hot sauce, Franks or sriracha
8 spicy beef or pork sausages
2 white onions, thickly sliced horizontally (as if for rings)
Olive oil
Pinch kosher salt
pinch freshly ground black pepper
Crusty rolls

Instructions:
1. Preheat the grill or grill pan.

2. In a large pot over medium heat, stir together beer, chili sauce, vinegar, brown sugar, curry powder and hot sauce. Cook until reduced by half.

3. While the sauce is reducing, grill sausages until browned and cooked through. Try get get a nice char on all sides. Set aside.

4. Brush onion slices with olive oil and season with some salt and pepper. Grill until golden and even brown in places,

5. Put the grilled sausages and onions in the pot with the sauce. Cook together for a few minutes to blend flavors and reheat everything. The sauce will thicken a bit more,

6. Serve sausages on crusty rolls topped with lots of sauce. A fork and knife are recommended.
