Chicken Wings with a Great Dry Rub (Food Network)

This is a great way to prepare chicken wings. No need for a sauce. The brining makes the chicken moist and tender. We usually do this in the air fryer which requires watching so they don't burn.
Serving Suggestions:
The ingredients are for 3 pounds of chicken wings which will easily make a great snack for 4-6 people. Most store-bought packages will be smaller, so adjust the ingredients accordingly.
Ingredients:
For 3 pounds of chicken wings:

2 tbs. distilled vinegar
1 tbs. kosher salt
3 pounds chicken wing segments (drumettes and flats)
Nonstick cooking spray, for the wire racks
2 tbs. light brown sugar
1 tbs. baking powder
1 tbs. chili powder
2 tsp. smoked paprika
1 tsp. freshly ground black pepper
1 tsp. ground chipotle chili powder
1/2 tsp. garlic powder
1/2 tsp. onion powder

Instructions:
1. Combine the vinegar and salt in a bowl large enough to hold the wings and stir to dissolve the salt as best you can. Add the wing segments and toss to coat with the vinegar mixture. Cover with plastic wrap and allow to brine in the refrigerator for an hour.

3. Meantime, make the rub. Combine all remaining ingredients in a small bowl and mix well.

4. Preheat oven to 425°F. (Our air fryer only goes to 400°, but even that was too hot the first time we made them.)

5. When ready to cook, remove the wings from the refrigerator and pour off any excess brine. Do not rinse. Pour the rub over the wings and using your hand(s) toss the wings to coat them everywhere.

6. If using the oven, prepare two baking sheets with parchment paper and a rack on top. Spray the racks with oil. If using the air fryer, spray the basket or rack with oil. You may need to cook these in batches with an air fryer.

7. Divide the wings between the racks or place in air fryer basket or rack and place in the oven. If you have two baking sheets place them on two racks. Swap the sheets' positions after 20 minutes, and cook until crisp and tender, 20 to 30 minutes more. In our air fryer at 400°F, it only took about 20 minutes to cook these.
