These are used in the Cheesy Baked Tacos, but you can use them for any taco recipe. |

6 corn tortillas Olive oil 1 tsp. fine pink Himalayan salt, or equivalent 1/2 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp. ground cumin 1/2 tsp. smoked paprika 1/2 tsp. chile powder Pinch cayenne |

Instructions:

1. Warm the tortillas in the microwave until pliable, about 30 seconds, or warm on a comal. 2. Rub one side with a little olive oil. 3. Mix the spices together and sprinkle some on the oiled side of each tortilla. 4. Fill the "other" side of the tortilla with filling and cheese and fold tortillas over, gently pressing to enclose the filling. (We've found that we sometimes need to secure them with a toothpick.) Arrange on a baking sheet and bake at 425°F for 5 to 8 minutes, then flip and bake about another 5 minutes until the cheese is melted and the tortillas are crisp. |
