Latin-Style Tamarind Syrup

This is a homemade version of Latin-Style tamarind syrup which is very hard to find in stores. "Delicia" makes a tamarind concentrate you can get on Amazon, if you don't want to make your own. You can also modify the Indian version by adding sugar and water. This is great in recipes, margaritas, or mixed with water for a refreshing drink.

Ingredients:
1/2 pound dried tamarind pods, with their shells
2 cups boiling water
3/4 cup granulated sugar
1 tbs. freshly squeezed lime juice

Instructions:
1. Remove the outer pod from the tamarinds, discard, and place the pulp in a bowl. Cover with 2 cups boiling water and let them sit for 2-24 hours.

2. With your hands, clean the tamarind of the large seeds and strains/threads. Strain in a colander, pressing with your hands or a spoon to get as much pulp as possible, reserving the juice.

3. Place the resulting tamarind juice in a saucepan. Bring to a boil, add the sugar, and let is simmer over medium heat for 30 minutes. The juice should have thickened considerably, to a thick syrup consistency.

4. Squeeze in the fresh lime juice, let is simmer for a couple of minutes more and then let it cool. Refrigerate in a tight container. This will keep for a couple of months.
