1/2-cup plus 1 tbs. all-purpose flour 1/4-cup cornstarch 3/4 tsp. freshly ground black pepper 1 tsp. sweet paprika 1 cup 2% milk 1 pound lean cube steak, in 4 portions 1 tsp. kosher salt 1 tbs. unsalted butter 1/2-cup beef or chicken broth 1/2 tsp. dried sage Olive oil spray |

Instructions:

1. Preheat oven to 200°F. (This is needed if you must cook the steaks in batches.) 2. In a shallow bowl, combine 1/2 cup of the flour, the cornstarch, 1/2 teaspoon of the pepper, and the paprika. In a separate shallow bowl, pour 1/2 cup of the milk. 3. Season the steak on both sides with the salt. Dredge the steaks first in the flour mixture, then in the milk, turning to coat and shake off excess. Dredge the steaks one more time in the flour mixture until evenly coated, using a fork to press them into the four to adhere well. Transfer to a cutting board for 10 minutes to let the breading set. 4. Meanwhile, in a medium skillet, melt the butter over medium heat and cook until foaming. When the foaming subsides, whisk in the remaining 1 tablespoon flour and continue to cook for 1 minute or so, just until the flour is blond in color and no longer smells raw. 5. Whisk in the broth, the remaining 1/2 cup milk, the remaining 1/4 teaspoon black pepper, and the sage. Cook, stirring frequently, until the mixture has thickened to the consistency of gravy, 7 to 10 minutes. 6. Spritz an air fryer tray or basket with oil. Working in batches as needed, add the steak to the air fryer basket in a single layer. Spritz the top with a bit more oil and cook at 400°F until the crust is deep golden-brown, about 10 minutes, flipping halfway through. If doing batches, place on a sheet pan and put in the oven to keep warm. 7. Divide the steaks among plates and serve with gravy poured on top. Gently warm the gravy if it has thickened too much as it cooled. |
