Beer-Battery Recipe for Fish-and-Chips

Probably the best home-made breading we've found for fish-and-chips, or breading any fish recipe. We use cod or grouper. We cut this in half for just the two of us.
Serving Suggestions:
Ingredients:
3/4 cup rice flour
1/4 cup cornstarch
1/2 tsp. kosher salt or more to taste
1 cup cold lager beer
1 large egg yolk (if halving, just whisk some and pour a bit out)
Skinless fish filets from a firm white fish, cod or grouper for example

Tartar sauce, cocktail sauce, lemon wedges, etc for serving

Instructions:
1. Heat oil to 350°F and maintain that temperature during cooking,

2.In a medium bowl, whisk together the dry ingredients.

3. In a small bowl, whisk together the beer and egg.

4. Gently stir the two together to create a batter the consistency of melted ice cream. Adjust dry ingredients or beer as needed,

5. Quickly dredge the fish fillets in the batter allowing excess to drip off and lay in oil (away from you). Cook 2-3 minutes per side, maintaining the 350° temperature.

6. Gently remove from the oil and allow to drain on a rack or paper towels. Sprinkle with salt as desired.
