2 pounds fresh blueberries, about 3 pints 3-1/3 cups granulated sugar Juice of one medium lemon |

Instructions:

1. Wash blueberries in a colander and let drain. Put in a large stainless steel pot. Add the sugar and lemon juice. Bring to a simmer, stirring to combing. 2. Transfer to a glass bowl and cover the top with parchment paper. Place in the fridge overnight. 3. Follow proper canning procedures for sterilizing four 1/2 pint jars, lids and rims. 4. Transfer the blueberry mixture to a large pot and bring to a boil. Cook at a good boil until the mixture reaches 221°F. This could take 30-45 minutes. Stir occasionally and skim off thick foam. 5. Gently ladle the blueberry mixture into prepared jars leaving a 1/2-inch head space, clean the rims, place the top and ring on. Process in boiling water for 15 minutes. Allow to rest in the water for 10 minutes then remove to drain and cool. |
