3 lbs. fresh figs, trimmed of stems and washed (1400 gm) 1/2 lbs. granulated sugar, or a bit less is okay (1000 gm) 1/2 tsp. vanilla extract Juice and zest of 1 lemon 1/2 cup water |

Instructions:

1. Trim the figs and rinse them off. Cut into quarters if desired. 2. Combine figs and sugar in a large pot and allow to sit for several hours, up to overnight. 3. Add vanilla, lemon zest and juice and water and bring to a boil over medium heat. Allow to cook at a low boil until the temperature reaches 220°F, about an hour. Watch carefully that it does not boil over as it thickens. The longer you cook, the more it will thicken. 4. Ladle into sterilized 1/2-pint jars, wipe off the rims and top with lids. Boil in water bath for 10 minutes for a shelf-stable product. |
