1 pound sweet potatoes, peeled and chopped 4-1/2 tsp. Kosher salt, divided 1/2 cup whole buttermilk 1/4 cup unsalted butter 3 tsp. chopped fresh rosemary, divided 1-1/4 tsp. ground black pepper, divided 1/4 tsp. garlic powder 2/3 cup shaved Gruyère cheese divided 1/3 cup panko bread crumbs 1/4 cup shaved Asiago cheese 2 tbs. unsalted butter, melted Garnish with fresh rosemary |

Instructions:

1. Preheat oven to 400°F. Spray 10-inch cast iron skillet with cooking spray. 2. Bring sweet potatoes, 2 teaspoons salt, and water to cover by 2 inches to a boil in a large Dutch oven over medium-high heat. Cook until tender, 15 to 20 minutes; drain well. Add buttermilk, 1/4 cup butter, 2 teaspoons rosemary, 2 teaspoons salt, 1 teaspoon pepper, and garlic powder. Mash until smooth, fold in 1/3 cup Gruyère. Spread in prepared pan. 3. Stir together bread crumbs, Asiago, remaining 1/3 cup Gruyère, remaining 1/2 teaspoon salt, remaining 1 teaspoon rosemary, and remaining 1/4 teaspoon pepper in a small bowl.Stir in melted butter. Sprinkle mixture over potatoes. 4. Bake until golden brown, about 30 minutes. Garnish with rosemary, if desired. |
