Artichoke Hearts Au Gratin

A simple tasty side dish.
Serving Suggestions:
We had this with fish, but think it would be great with chicken or pork.
Ingredients:
2 14-oz. cans artichoke hearts, sliced lengthwise
1/2 clove garlic, minced
1/4 cup butter
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1/3 cup sifted flour
1-1/2 cups milk
1 egg, slightly beaten
1/2 cup grated Swiss cheese
1 tbs. (or more to taste) finely crushed bread crumbs
1 tsp. paprika

Instructions:
1. Sauté sliced artichoke hearts with garlic in butter until tender. Remove to a shallow baking dish.

2. Stir flour, salt and pepper into butter remaining in pan. (We’ve found we need to add a tablespoon or more to the pan first.)

3. Slowly add milk, whisking constantly. Cook over low heat until thickened. Remove from heat. Slowly add this to the eggs, whisking constantly, along with 1/4-cup cheese. Blend until smooth.

4. Pour sauce over artichoke hearts and sprinkle with remaining 1/4 cup cheese, bread crumbs and paprika.

5. Bake at 400°F for 15 minutes or until bubbly and the top begins to brown.
