30-Minute Instant Pot Southwest Chicken Chili

A really delicious and quick soup/chili. The taste to preparation time ratio on this one is huge.
Serving Suggestions:
Serve with sour cream, pickled jalapeños, and/or red onion; some cilantro on top is great, also with tortilla chips or slightly toasted flour tortillas. We also grated some cheddar cheese on top. Mix it up, because you'll have leftovers!
Ingredients:
1 tbs. olive oil
1 white onion, diced
6 cloves garlic, minced
1 tbs. chili powder
2 tsp. cumin
2 (15 ounce) cans pinto beans, drained and rinsed
10 oz. frozen fire-roasted corn
15 oz. can fire-roasted diced tomatoes
29 oz. can enchilada sauce (we use Las Palmas)
1 cup chicken broth (or water)
1 pound boneless, skinless chicken breast
1/2 cup heavy cream
Kosher salt
Freshly ground black pepper

Serve with:

Fried tortilla chips
Cheddar cheese
Sour cream
Thinly sliced green onion
Thinly sliced jalapeno or pickled jalapeño or maybe red onion

Instructions:
1. Heat oil in the instant pot on sauté setting (level 5 on ours).

2. Add the onion and a couple pinches of salt and pepper and sauté for 4 minutes.

3. Add garlic, cumin, and chili powder along with a couple pinches of salt and pepper. Cook for about 1 minute, stirring.

4. Add a spash of the chicken broth to deglaze the bottom of the Instant Pot, scraping up any brown bits on the bottom.

5. Add the pinto beans, corn, tomatoes, enchilada sauce, remaining broth, and chicken.

6. Stir to combine and nestle the chicken into the mixture. Seal the Instant Pot and cook on pressure cooker high setting for 15 minutes.

7. Allow to naturally release for 10 minutes, then use the quick release to remove the rest of the pressure. Remove the chicken breast and gently shred with two forks.

8. Stir in the heavy cream, add the chicken back, and season to taste with salt and pepper.

9. Garnish with any number of toppings.
