This was a recommended pairing with the Calabash Shrimp recipe. Both come from the North Carolina state magazine. Cheerwine is a soft drink invented during the first world war (1917) by L. D. Peeler in Salisbury, NC. There was a sugar shortage during the war and he invented this drink using the natural sweetness of cherries. You might have a problem finding Cheerwine outside of the Carolinas. |

Ingredients:

1/2 cup mayonnaise 1/4 cup Cheerwine 1 tsp. sugar (or less, we use half this) 1 tsp. salt 1/2 tsp. black pepper 1 bag of coleslaw mix or: 1 head green cabbage, shredded 1/2 head purple cabbage, shredded 2 carrots, peeled and grated 3 green onions, sliced |

Instructions:

1. In a small bowl, whisk together mayonnaise and Cheerwine. Stir in sugar, salt and pepper. 2. In a separate bowl, toss together the cabbage, carrots and onions. Pour mayonnaise mixture over cabbage. Toss until all ingredients are well incorporated. Refrigerate one hour before serving. |
