This is a Southern take on the classic BLT. What makes it Southern? Fried green tomatoes and pimento cheese for starters.
Serving Suggestions:
We usually have a dollop of cottage cheese with any BLT.
Ingredients:
Cooking spray
1 large green tomato (you need 4 slices)
1/2 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/4 cup all-purpose flour
1 large egg, beaten
1 cup panko breadcrumbs
4 slices of bread toasted
1 cup prepared pimento cheese, more or less to taste
6-8 cooked center-cut bacon strips, depending on how much you want on each sandwich
4 leaves of red or green lettuce
We like to use arugula microgreens instead of or in addition to lettuce

Instructions:
1. Preheat your air fryer to 350°F. Coat the air fryer basket or rack with cooking spray.

2 Cut the tomato into four slices. Sprinkle with salt and pepper.

3. In a shallow bowl, add the flour. In another bowl, beat the egg. In a third bowl, place the panko.

4. Dip the tomato slices in the flour, shaking off the excess, then into the egg, and finally into the panko to coat well. Pat to adhere.

5. Arrange the tomato slices in a single layer in the basket or tray and spray with cooking spray. Cook until golden brown 4 to 6 minutes. Turn and spray with cooking spray. Cook until golden brown, another 4 to 6 minutes longer.

6. Spread the pimento cheese over all four slices of the bread. Then layer each of two slices with bacon strips, one or two lettuce leaves, (add some arugula microgreens if you have them), and two tomato slices. Place the other two prepared bread slices on top, pimento cheese side down.
