Chicken Jalapeño Popper Pizza

Who doesn't like jalapeño poppers? Who doesn't like pizza? Here is another of Rick's pizzas in his attempt to hone the art of the pizza. The ingredient amounts in this recipe are not rigid. Use as much or as little of each ingredient as you like. It is a good idea to test the heat of the jalapeños before deciding on an amount.
Serving Suggestions:
We like this pizza drizzled with a bit of hot honey.
Ingredients:
1 pizza dough ball
2 slices of bacon
1/4 cup chopped onion, use as much as you wish
1 clove garlic, chopped fine or minced
6 oz. of cream cheese at room temperature
2 tbs. ssour cream
Pickled jalapeños
1 cup pre-cooked chicken (we use rotisserie)
1 cup pepper jack cheese, shredded
A few fresh or pickled jalapeño slices
Hot honey drizzle if desired

Instructions:
1. Preheat your pizza oven or put a pizza stone in your kitchen oven and preheat to as hot as it goes.

2. In a sauté pan, render the bacon to the desired doneness. We like to catch it just before it goes crisp for this recipe. Remove the bacon and when it cools somewhat, crumble it into bite-sized pieces. Reserve one tablespoon of the bacon grease in the pan.

3. Make the sauce: Cook the chopped onion in the reserved bacon fat over medium heat until it softens. Add the garlic and cook, stirring, for one minute. Add the cream cheese and sour cream, stirring to combine. Add the pickled jalapeños, stir to combine, and set aside to cool some.

4. Stretch the pizza dough to a 12- to 14-inch round. Place it on a pizza peel lightly sprinkled with white rice flour. We've found that rice flour makes the best "lubricant" for launching a pizza.

5. Carefully spread the cooled sauce on the pizza dough. Top with torn or cut chicken pieces. Top that with the shredded cheese. Then add some jalapeño slices to taste. Spread the bacon crumbles on top of that.

6. Cook until done. It will cook fast. Turn it a time or two if using a pizza oven.

7. When done, slice and serve, drizzled with a bit of hot honey if desired.
