This year we had an abundance of green beans from our raised-bed garden, so we were desperate to find new ways to use them. This and one other recipe from this cookbook helped us out a lot. We cooked this several times. We love the Asian-inspired flavors. |

2 tbs. neutral oil, such as peanut, sunflower, or grapeseed, plus more if needed 1 pound ground pork 1 tsp. kosher salt, divided 8 oz. green beans, cut into 1/2-inch lengths 1 pint cherry or grape tomatoes, halved 1-2 jalapeƱo or serrano peppers, seeded if you like, thinly sliced 1 tbs. grated fresh ginger 5 garlic cloves, minced 1 tsp. cumin seeds 1/4 cup chopped fresh cilantro leaves and tender stems, plus more for serving 3 tbs. rice vinegar, plus more for serving 4 tsp. soy sauce plus more for serving 1/2 tsp. sugar |

Instructions:

1. Heat a large skillet over medium-high heat for 1 minute, then add the oil and heat for another 30 seconds--it should be hot but not smoking. Stir in the pork and 3/4 teaspoon salt, and cook, breaking up the meat with a spoon, until browned and crispy, 6-9 minutes. You really want this to cook to a crispy consistency. Don't worry if it starts to brown at the edges, that is flavor. The cookbook says you should get "crispy mahogany nuggets". Use a slotted spoon to transfer the pork to a plate. 2. Return the pan to the heat and add more oil if it looks dry. Stir in the green beans and tomatoes and cook for 30 seconds. Stir in the chiles, ginger, garlic, cumin seeds, and remaining 1/4 teaspoon salt. Cook, stirring frequently, until fragrant, about 1 more minute. 3. Return the pork to the skillet, along with the cilantro, vinegar, soy sauce, and sugar. Stir briefly to combine, then scrape onto a serving platter. 4. To serve, sprinkle with more vinegar and soy sauce to taste, then top with cilantro. |
