This sauce can accompany the Salt and Pepper Wings recipe found elsewhere, but was to accompany a Crunchy Cornflake Chicken strips recipe that we have not yet tried. Can also be brushed on grilled foods toward the end of cooking. |

Ingredients:

2 cups diced ripe mango 4 jalapeños, halved, seeded, and chopped 1/4 cup white wine vinegar 1/4 cup sugar 2 shallots, finely chopped 2 tbs. water 1/4 cup chopped fresh cilantro 2 tbs. lime juice 4 cloves garlic, minced Salt and freshly ground black pepper |

Instructions:

1. Combine the mango, jalapeños, vinegar, sugar, shallots, and water in a 2-quart saucepan and bring to a boil. Reduce the heat to a simmer, cover the pan, and simmer until the mango is softened, about 10 minutes. Remove from the heat. Let the mango mixture cool slightly before puréenng it in a blender, or use an immersion blender to purée it while still hot, then let cool. 2. Stir the cilantro, lime juice, and garlic into the cooled purée. Add salt and pepper to taste. This keeps in the refrigerator for up to a week. |
