Brined Turkey

Ingredients:
1 12 lb. turkey
1 cup lemon juice
3/4 cup fresh orange juice
1 gallon water
1 cup Kosher salt
1 cup packed brown sugar
1 cup yellow onion, chopped
2 oranges, cut in half
3 cinnamon sticks
2 tbs. whole cloves
2 tbs. whole allspice berries
1 cup brandy

Oil
Emeril's Original Essence:

5 tbs. sweet paprika
1/4 cup salt
1/4 cup garlic powder
2 tbs. freshly ground black pepper
2 tbs. onion powder
2 tbs. cayenne pepper
2 tbs. dried oregano
2 tbs. dried thyme

Instructions:
1. Combine all brine ingredients in a large non-reactive container or heavy duty trash bag.

2. Clean and wash the turkey well and let it drain.

3. Place the turkey in the brine and allow to soak in the refrigerator at least 12 hours and up to 24 hours. Turn 3 or 4 times during the brining.

4. Remove the turkey from the brine and rinse well. Pat dry with paper towels.

5. Rub the surface of the turkey with oil and sprinkle with 1 tablespoon of Emeril's Essence.

6. Roast in a preheated 375°F oven for 15 minutes per pound, tenting with foil if necesary.
