3 tbs. extra-virgin olive oil 4 cloves garlic 1 pound Chilean farm-raised sea bass 1/4 tsp. salt 1/4 tsp. freshly ground black pepper 1/2 tsp. paprika 1/4 tsp. cayenne pepper (or red pepper flakes) 1 tsp. freshly chopped Italian parsley 1/2 tsp. fresh basil 1/2 lemon |

Instructions:

1. Preheat the oven to 500°F. 2. In a blender combine the oil and garlic until well-blended. 3. Place the fish in a medium bowl. Pour the oil mixture over the fish and marinate well, for about 30 minutes turning occasionally. 4. Remove the fish from the bowl and place in a small broiling tray, about 1" larger than the fish. Sprinkle the fish with salt, pepper, paprika, and cayenne pepper. 5. In a small bowl combine the parsley and basil. Sprinkle over the fish. Squeeze the lemon juice over the fish. 6. Bake the fish for 20 to 25 minutes. It should smoke some and form a nicely browned crust on top. If necessary, turn down the oven to 325 and cook until just done. |
