1 egg, lightly beaten 2 tbs. canola oil 1 tsp. toasted sesame oil 1 tbs. water 1 tbs. light soy sauce 1/2 tsp. salt 1/4 tsp. ground black pepper 2 tbs. uncooked oat bran 1/4 cup sesame seeds 1-1/2 pounds boneless, skinless chicken breasts, cut into 2" pieces |

Instructions:

1. Preheat oven to 350°F. 2. In a shallow bowl, combine the egg, canola oil, sesame oil, water, soy sauce, salt and pepper. 3. In a small bowl, combine the oat bran and sesame seeds. 4. Dip the chicken pieces in the egg mixture, then dredge in the bran mixture. Place in an 11" X 7" non-stick baking pan. 5. Bake for 30 minutes, or until the chicken is no longer pink in the center and the internal temperature reaches 170°F. |
