5 large green bell peppers 1-1/2 cups chopped onions 1/2 cup chopped carrots 3 pounds ground sirloin beef 2 tbs. minced fresh parsley 1 tbs. finely chopped garlic 1 tsp. dried thyme 1 tsp. dried basil 2 tsp. salt 1 tsp. freshly ground black pepper 1/4 tsp. cayenne pepper 1 tbs. Worcestershire sauce 1 (28 ounce) can chopped tomatoes 1 cup grated Parmesan cheese |

Instructions:

1. Preheat oven to 350°F. 2. Slice the tops off the green peppers and remove the seeds and membranes. 3. In a medium bowl, combine the onions, carrots, ground meat, parsley, garlic, thyme, basil, salt, pepper, cayenne, Worchestershire sauce, and tomatoes. 4. Stuff each pepper to the top with the ground beef filling. Place the peppers upright in a lightly oiled baking dish. Bake for about 55 to 60 minutes or until the beef is cooked through and the peppers are tender. When the peppers are cooked, top them with the cheese and place them back in the oven until the cheese is melted. |
