4 nice tenderloins or New York strip steaks about 1 inch thick 1 tbs. butter 1 tbs. olive oil 6 tbs. Brandy 1/4 cup minced shallots 1-2 tbs. green peppercorns, to taste 3/4 cup heavy cream 1 tbs. Dijon mustard 1/2 tsp. tarragon Salt |

Instructions:

1. Cook steak in butter and oil 3-5 minutes/side. Add Brandy & flame (careful!). Remove meat and keep warm. 2. Add shallots to pan, cook over high heat 2-3 minutes. Drain and rinse peppercorns. Add peppercorns, cream, mustard, tarragon to pan. Boil 3-4 minutes. Season meat. Serve with sauce spooned over meat. |
