4 boneless, skinless chicken breasts 1/2 tsp. salt 1/4 tsp. freshly ground pepper 1 tbs. olive oil 1/4 cup minced shallots 1/2 cup chicken broth 3 tbs. balsamic vinegar 1 tsp. brown sugar 1 tbs. butter |

Instructions:

1. Place chicken breasts between 2 sheets of wax paper. Pound 1/2 inch thick; sprinkle chicken with salt and pepper. Heat oil in large skillet over medium-high heat. Cook chicken 4 minutes per side. Transfer to serving platter, cover and keep warm. 2. Add shallots to skillet and cook, stirring, 2 minutes. Add broth, vinegar and brown sugar. Bring to boil; cook until reduced by one third, about 4 minutes. Whisk butter into skillet until melted. Pour over chicken and serve. |
