2 oz. loose Mexican style chorizo 1 small peeled onion, in thin slices 1/2 diced tomato 4 cups grated Monterey Jack cheese 1 tbs. 151 proof rum Flour tortillas |

Instructions:
|
1. Preheat oven to 400°F. 2. Fry the chorizo in a medium skillet over medium heat for 6-8 minutes. 3. Add onion, sliced into rings, and diced tomato. Cook until onions are soft, 8-10 minutes, set aside. 4. Put the 4 cups of cheese into a small cast-iron skillet, bake until melted, 12-15 minutes. 5. Spoon chorizo mixture over cheese. Pour the tablespoon of rum over cheese and flame. 6. Serve with tortillas. |
