1 lb. fresh tortellini 4 tb.s butter 1-1/4 cups heavy cream 4 ounces Parmesan cheese Freshly grated nutmeg Salt and ground black pepper |

Instructions:

1. Cook the pasta in plenty of boiling salted water according to package directions. 2. Meanwhile, melt the butter in a medium saucepan and stir in the cream. Bring to a boil and cook for 2-3 minutes until the mixture is slightly thickened. 3. Grate the Parmesan cheese and stir 3/4 cup of it into the sauce until melted. Season sauce to taste with salt, pepper and nutmeg. Preheat the broiler. 4. Drain the pasta well and spoon into a buttered casserole. Pour on the sauce, sprinkle the remaining cheese on top and place under the broiler until brown and bubbling. Serve immediately. |
