4 Granny Smith Apples (1 1/2 lb.) or other tart, firm apple such as Rennets 2 cups good quality white wine 2 (3 inch) cinnamon sticks 1 tsp. whole cloves 2 cups sugar 1 (12 oz.) pkg. cranberries, chopped 2 cups cognac or brandy 1 tsp. grated orange zest |

Instructions:

1. Pare and core apples; cut into eighths. Place in large glass bowl; add 1/2 cup wine and the spices. Microwave on High 8 minutes or until boiling, stirring occasionally. Add sugar; microwave on High 4 minutes, stirring once to dissolve sugar. 2. Add cranberries, brandy or cognac, remaining wine and the orange zest. Pour into 2 quart glass container, seal. Store in cool, dark place for 3 weeks, shaking occasionally. 3. Strain through double thickness of cheesecloth; repeat until liquid is clear. Pour into 1 quart bottle or decanter; seal. Store in cool dark place for 2 weeks. |
